Yummy Nutritious Morning Meal!

It may get quite boring to have the same breakfast every morning, such as dosa, idli, chapati, and so on. It becomes challenging to convince kids to have these items every day since they crave variety. However, there are plenty of interesting and delicious alternatives for breakfast that my mom use to make for us ,which is both nutritious and convincing for both kids and adults.

1. Veggie Dosa Recipe

Take some dosa/idli batter and grate a small bowl of carrot, beetroot, onion, curry leaves, coriander leaves, 2-3 green chillies, and a small amount of grated ginger for added flavor. If available, you can also add veggies like radish or capsicum. Mix all the grated veggies with the batter and add salt according to your taste.

Next, heat a kadai and add some coconut oil. Add mustard seeds and dal to the kadai. Then, pour the mixed batter into the kadai, shaping it into small dosas, and cover it with a lid. Allow it to cook. Once one side is cooked, flip it over to cook the other side.

You can enjoy these delicious dosas with or without chutney. They are a yummy and nutritious alternative to traditional dosas.

2. Fruity Oats Recipe

Boil one glass of milk along with 3 tablespoons of oats and let it cook. Once it is cooked, let it sit for a while. Meanwhile, cut half a cup of ripe mango, apple, musk melon, or watermelon (choose fruits according to your preference, but avoid citrus fruits). Mix the cut fruits well with the cooked oats.

Next, add 1 teaspoon of chia seeds to the mixture and let it sit for 10 minutes to allow the flavors to meld together. Finally, you can enjoy your tasty fruity oatmeal, and if needed, you can garnish it with honey and nuts of your choices.

3 . Sweet Muringa Dosa Recipe

Mix wheat flour with water until you get a smooth consistency. Add chopped Muringa leaves to the batter and season with salt according to taste.

For the filling, take grated coconut and mix it with crushed jaggery, a pinch of salt, and cardamom powder for a flavor. Mix the ingredients well to create a sweet coconut-jaggery mixture.

Next, heat a pan and add oil to it. Pour the wheat dosa batter into the pan and make both side half cook.  Once it is halfway cooked, add the coconut-jaggery mixture inside the ooked part of dosa and fold it over. Cook both sides of the dosa until they are well done.

Now, your delicious Sweet Muringa Dosa is ready to be served.
